Ingredients Serves 3

  • 3 potatoes
  • 10.5 oz/300 g spinach
  • 1 inch/2.5 cm ginger root
  • 1 onion
  • 5 cloves garlic
  • 3 tbsp oil
  • 1 tsp cumin
  • 2 tsp ground coriander
  • 1/3 tsp pepper
  • 1 tsp salt
  • 1 tbsp butter
  • 1/2 cup cream (20%)

Method

  1. Wash the spinach, put into boiling water and cook for 3 to 5 minutes, drain, put into blender and process. Peel the potatoes, cut into small cubes. Peel the onion, garlic and ginger root, cut them finely.

  2. Heat the oil in frying pan over low heat, add the potato and cook stiring frequently until tender (about 15 minutes), then transfer to separate bowl

  3. In the same frying pan heat cumin seeds for 1 minute, add the onion, garlic and ginger and cook for 3 minutes, stirring often.

  4. Then add the spinach, coriander, pepper, stir well and cook covered for 5 minutes.

  5. Add the potato, season with salt. Pour the cream, add the butter, mix thoroughly and remove from heat.
