"Risi e Bisi is a wonderful local Venetian dish. Risi e Bisi simply means rice and peas. It usually made of fresh green peas but frozen peas also work well. It's very simple and delicious! "

Ingredients Serves 3 - 4

  • 2/3 cups arborio rice
  • 1.5 cup green peas
  • 1 onion
  • 1/2 cup dry white wine
  • 1.5 oz/40 g parmesan cheese
  • 3 tbsp oil
  • 1 pint hot water
  • 1 tsp salt
  • 1/3 tsp pepper

Method

  1. Chop the onion up.

  2. In a frying pan heat 3 tbsp oil, sauté onion over medium-high heat for 2 minutes.

  3. Add rice, cook 3 minutes stiring constantly.

  4. Pour 1/2 cup wine and simmer until the wine has completely absorbed.

  5. Begin to add hot water gradually. Add one ladder of water and wait until it's absorbed by the rice, then add the next ladder. Continue untill only one ladder is left. Stir from time to time.

  6. Meanwhile grate the parmesan cheese.

  7. When the last ladder of water is left, add grean peas to the pan, and cook until the luquid is absorbed. Then add a handful of grated parmesan, salt and pepper. Stir well, cover with a lid and leave it for about 5 minutes. Serve with grated cheese on top.
