Ingredients Serves 12
- 12 taco shells
- 1 cup black beans
- 2/3 cups quinoa
- 7 oz/200 g cheddar cheese
- 1 chili pepper
- 1 tsp salt
Soak black beans overnight, drain and rinse, pour two cups of fresh water and simmer beans covered for 1.5 hour. While cooking add more water if needed. Add salt at the end.
Grate cheese and cut chili pepper finely.
Bring to a boil 1.5 cup of water, salt, add quinoa and simmer covered for 15 minutes.
Combine cooked beans and quinoa, add chili pepper and half of cheese. Mix thouroughly.
Fill the taco shells
Sprinkle some cheese over the top of each taco, put tacos vertically into a baking dish, place into the oven and bake at 350F/180C for 15 minutes.
