Ingredients Serves 4
- 1 leek
- 9 oz/250 g spaghetti
- 1 cup red wine
- 1.5 oz/50 g parmesan cheese
- 1 oz/30 g butter
- 1 tsp salt
- 1/2 tsp pepper
- 1/3 tsp nutmeg
Slice the white part of the leek, grate parmesan cheese.
In a frying pan melt the butter over medium heat.
Add the leek, saute for 5-7 munites, until soft.
Add the wine, salt, pepper and nutmeg, cook for 5 more minutes. Puree the sauce using blender until it's nicely smooth.
Cook the spaghetti according to the package instructions.
Mix spaghetti with the wine sauce. Serve with grated parmesan cheese on top.
