Ingredients Serves 4

  • 1 leek
  • 9 oz/250 g spaghetti
  • 1 cup red wine
  • 1.5 oz/50 g parmesan cheese
  • 1 oz/30 g butter
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 tsp nutmeg

Method

  1. Slice the white part of the leek, grate parmesan cheese.

  2. In a frying pan melt the butter over medium heat.

  3. Add the leek, saute for 5-7 munites, until soft.

  4. Add the wine, salt, pepper and nutmeg, cook for 5 more minutes. Puree the sauce using blender until it's nicely smooth.
