Ingredients Serves 6
- 1.5 zucchini
- 5 tomatoes
- 5 potatoes
- 1 onion
- 4 tbsp oil
- 1.5 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/3 tsp nutmeg
Peel the zucchini and cut into cubes.
Peel the potatoes and cut into fine strips, cut the onion finely.
Peel the tomatoes, cut them finely or chop in a blender.
Heat up the frying pan over a meadium heat, pour 2 tbsp oil, add zucchini and fry for 10 minutes.
In a separate pan fry the onion in 2 tbsp oil for 2 minutes,
then add the potatoes and cook for 7-10 minutes, stiring friquently.
Sauce: Put the tomatoes into the sauce pan and place over medium heat, add salt, pepper, cumin and nutmeg, boil for 10 minutes.
In a large pan place the layer of zucchini, then the layer of potato and pour the tomato sauce on top. Cover the pan, put it over a low heat and simmer for 20 minutes.
