Ingredients Serves 6

  • 3 potatoes
  • 1 carrot
  • 1 bell pepper
  • 4 tbsp sauerkraut
  • 2 tbsp oil
  • 2 tsp salt
  • 1/2 tsp pepper
  • Some dill or parsley for garnish

Method

  1. Cut the potatoes into cubes.

  2. Put them into medium sized pan with 50 oz/1.5 liters water and bring to the boil.

  3. Add the sauerkraut, cover partially and cook over medium heat for 15 minutes.

  4. Chop the onion, cut the carrot and bell pepper into small pieces.

  5. Heat the oil in a frying pan, add the onion and saute over medium heat for 2 minutes.

  6. Add the carrot and fry for 3 minutes more. Then add the bell pepper and continue frying for 5 munites. Stir occasionally.

  7. Transfer the fried veggies into the pan, salt, pepper mix well and simmer together for 5 minutes. Serve hot with minced dill/parseley on top. Rye bread is good on the side.
