Ingredients Serves 4
- 2 onions
- 1 lb (450 g) green beans
- 2 bell peppers
- 2 cloves garlic
- small bunch cilantro
- 3 tbsp vegetable oil
- 1 cup walnuts
- 2 tomatoes
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1.5 tsp khmeli-suneli spice mix
Peel and cut 2 medium onions into cubes.
Prepare the green beans, trim both ends with a knife and cut them into 2-inch pieces.
Peel and slice one or two bell peppers into small strips. Peel and mince two cloves of garlic. Chop a bunch of cilantro.
Ground 1 cup of walnuts in a blender or food processor.
Dice 2 medium tomatoes.
Heat 3 tablespoons of vegetable oil in a frying pan, stir fry the onion over medium heat for 3-4 minutes, until soft.
Add the green beans and the bell peppers, cook covered for 10 minutes, stiring from time to time.
Add the tomatoes, 1 teaspoon of salt, 1/2 teaspoon of ground black pepper and cook for 3 minutes under the lid. Next, add the walnuts, cilanto, garlic and khmeli-suneli spice mix.
Khemi-Suneli is a complex spice, it's made of more than 10 herbs grown in the region of Georgia. So, It's preferably to buy it. But if it's not available, make a simplified mix, combining equal amounts of dried basil, dill, coriander and marjoram.
Mix well and remove from heat.
