Ingredients Serves 6
- 3 kiwis
- 1/2 cup coconut milk
- 1 ripe avocado
- 2 tbsp agave or maple syrup
Peel 2 kiwis and cut them into chunks. Cut the third kiwi into thin slices.
Peel and cut one ripe avocado. Check the article How to peel an avocado.
Place kiwi (except kiwi slices) and avocado into a blender jar. Add 1/2 cup of coconut milk and 1-2 tablespoons of agave or maple syrup and process until smooth.
Place one kiwi slice to the bottom of each popsicle mold, with the tips of your fingers press the kiwi slice to the side of the mold. Pour mixture in molds and freeze for at least 4 hours.
