Ingredients Serves 6
- 1 cup bulgur
- 3 tomatoes
- 3.5 oz/100 g parsley
- 2.5 oz/70 g green onion
- 0.9 oz/25 g fresh mint
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 lemon
Place 1 cup bulgur in a bowl, pour 2 cups boiling water, cover and let stand 15 minutes. Bulgur will absorb most of water and become tender. Remove any excess liquid.
Cut the tomatoes roughly.
Chop the parseley, green onion and mint.
For salad dressing blend 2 tbsp olive oil, 1 tsp salt, 1/2 tsp black ground pepper and juice of 1/2 lemon.
Combine bulgur with the greenery, tomatoes, and dressing, mix well.
