Ingredients Serves 3 - 4

  • 1 ⅔ cups whole wheat flour
  • 1 tsp baking powder
  • 11 tbsp vegetable oil
  • 1 onion
  • 10 oz/300 g pumpkin
  • 1 (15-oz) can white beans
  • 2 cloves garlic
  • 1 tbsp lemon juice
  • 1/2 tsp dried thyme
  • 10-15 leaves baby spinach
  • 1/2 apple
  • Some salt and pepper

Method

  1. For the pizza dough:
    Sift 1 ⅔ cups of whole wheat flour into a bowl, add 1 tsp baking powder and 1/2 tsp of salt. Mix well. Next, add 3.4 oz (100 ml) of water and 4 tbsp of vegetable oil. Mix with a spoon and then knead with your hands. Shape the dough into a ball.

  2. Peel the onion and cut it into half-moon slice. Not too thin.

  3. Heat up 2-3 tablepoons of vegetable oil in a non-stick frying pan. Add the onion and cook over the lowest heat, stiring occasionally, for 25-30 minutes. Caramelized onion should be brown but not burnt.

  4. Peel the pumpkin, remove the inner seeds and cut the flesh into small cubes.

  5. In a bowl combine cubed pumpkin with 2 tablespoons of vegetable oil, 2/3 tsp of salt and 1/2 tsp of pepper. Toss well to coat.

  6. Place the pumpkin on a lined baking tray. Bake at 400 F (200C) degrees for 25-30 minutes until the pumpkin is very soft.

  7. For the sauce:
    Combine 1 can of drained white beans, 2 cloves of garli, 2 tbsp of vegetable oil, 1 tbsp of lemon juice, 1/2 tsp of dried thyme, 1 tsp of salt and 1/2 tsp of black pepper in a blender jar. Process until smooth consistency is reached.

  8. Cut a piece of baking parchment to fit the size of baking tray. Place the dough on it and roll into a round shape (or any other shape you like).

  9. Spread a generous amount of white bean sauce over the pizza crust. Place several spinach leaves and caramelized onions on the sauce layer.

  10. Next, place some apple slices and finish with roasted pumpkin.

  11. Place into the oven and bake for 20-25 minutes.
