Ingredients Serves 12
- 2 cups chickpea/all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ginger
- 3 oranges
- 3/4 cup agave/maple syrup
- 3 tbsp canola oil
- 1 tbsp apple cider vinegar
Sift 2 cups of chickpea flour (or all-purpose flour) into a bowl, add 1 tsp baking powder, 1/2 tsp salt and 1 tsp ginger. Mix well.
Zest one orange using a microplane grater. Squeeze 1 cup of orange juice.
In a separate bowl combine orange juice, orange zest, 3/4 cup of agave or maple syrup, 3 tablespoons of canola oil, 1 tablespoon of apple cider vinegar, mix thoroughly.
Pour the wet mixture into a bowl with the dry ingredients. Stir carefully until combined. But don't overmix.
Slightly grease the muffin molds and fill them with the batter, about 3/4 full.
Bake in the preheated to 350 F/180 C degrees oven for 25 minutes.
This recipe makes 12 standard-size muffins.
