Vegan Orange Muffins

Vegan Orange Muffins step-by-step recipe |
"Just look at this gorgeous orange muffins! They are so delicious, sweet and perfectly soft. You will never believe that they're completely egg-free, dairy-free, refined sugar-free and gluten-free and all things HEALTHY! Yum!"

Ingredients Serves 12

  • 2 cups chickpea/all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ginger
  • 3 oranges
  • 3/4 cup agave/maple syrup
  • 3 tbsp canola oil
  • 1 tbsp apple cider vinegar


  1. Sift 2 cups of chickpea flour (or all-purpose flour) into a bowl, add 1 tsp baking powder, 1/2 tsp salt and 1 tsp ginger. Mix well.

  2. Zest one orange using a microplane grater. Squeeze 1 cup of orange juice.

  3. In a separate bowl combine orange juice, orange zest, 3/4 cup of agave or maple syrup, 3 tablespoons of canola oil, 1 tablespoon of apple cider vinegar, mix thoroughly.

  4. Pour the wet mixture into a bowl with the dry ingredients. Stir carefully until combined. But don't overmix.

  5. Slightly grease the muffin molds and fill them with the batter, about 3/4 full.

  6. Bake in the preheated to 350 F/180 C degrees oven for 25 minutes.

    This recipe makes 12 standard-size muffins.
