"Here is a very simple and traditional Chinese side dish. Eggplants stir-fried with garlic, chilli, ginger and soy sauce. If you are an aubergine lover, you will absolutely enjoy this dish. Eggplants turn out very juicy and soft!"

Ingredients Serves 3 - 4

  • 2 eggplants
  • 2 cloves garlic
  • 2 ginger root
  • Small bunch scallion
  • 1/2 tsp chili pepper
  • 4-5 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1/2 tsp sugar (optional)

Method

  1. Cut the eggplants into long strips, about 3 inches long.

  2. Peel and mince 2 cloves of garlic. Grate small piece of ginger root using a microplane grater. Cut the scallions.

  3. Heat up 3 tablespoons of vegetable oil in a wok or a non-stick pan over high heat. Add the eggplants and fry stiring constantly for 3-4 minutes. Add more oil if required.

  4. Move the eggplant pieces aside to release some place on the surface of the pan. Place there ginger, garlic, 1/2 tsp chili pepper and scallions, cook for 1 minute.

  5. Then stir together with eggplants and stir-fry for 1 minutes. Remove from heat, add soy sauce, balsamc vinegar and optionally 1/2 tsp of sugar. Mix well.
    Serve with rice or noodles.
