Spring Pea and Mint Soup

Spring Pea and Mint Soup step-by-step recipe |
"Refreshing spring inspired green pea and mint soup. It's vegan and gluten-free, very quick and easy to make! Green peas are bursting with nutritional goodies! And the lovely green hue looks bright and festive on any table!"

Ingredients Serves 5

  • 1 onion
  • 2-3 tbs vegetable oil
  • 6 cups fresh or thawn green peas
  • 1 lemon
  • small bunch fresh mint
  • 1.5 tsp salt


  1. Peel and dice one large onion.

  2. In a heavy bottom pan heat up 2-3 tablespoons of vegetable oil, saute the onion for 3-4 minuts until transculent over medium heat.

  3. Add 6 cups (600 g) of fresh or thawn green peas. Add 5 cups of water, bring to a boil, reduce heat and simmer uncovered for 7 minutes.

  4. Meanwhile, rinse a small bunch of mint, remove hard stems and chop finely. Squeeze the juice out of one lemon.

  5. Using an immersion blender, puree the soup, add chopped mint, lemon juice and 1.5 tsp salt.
    Serve soup hot or cold, garnish with mint leaves and lemon or lime slices.
