"This is a simple and beautiful salad to treat someone very special! Cooked beets, grapefruit and nuts is a tasty, healthy and sexy combination. Perfect for Valentine's Day or a romantic evening at home."

Ingredients Serves 4

  • 3.5 oz/100 g lettuce
  • 2 beets
  • 1 grapefruit
  • 1 cup walnuts or pine nuts
  • 1.5 tbsp apple cider vinegar
  • 2 tbsp agave or maple syrup
  • 1 tsp dijon mustard
  • 1 clove garlic (optional)
  • 1 tsp salt

Method

  1. Wash beets, place them into a pan, and fill with enough water to cover. Boil over medium low heat for about 40 minutes or until tender. Drain and let them cool. Next, peel and slice into 1/4 inch thick. I used cookie cutters to cut several heart-shaped pieces for garnish. Cut remaining beet into small cubes.

  2. Wash, drain, and dry lettuce or whatever salad greens you like: arugula, baby spinach, corn, chard etc.

  3. Cut the grapefruit segments out of the membrane. Chop the walnuts into smaller pieces. For this salad you can use walnuts, pine nuts or both. I used 50/50 mix.

  4. In a small jar, combine 1.5 tablespoon of apple cider vinegar, 2 tablespoons of agave or maple syrup, 1 teaspoon of dijon mustard, 1 clove finely chopped garlic and 1 teaspoon of salt to make the dressing. Place a lid and shake until mixed well.

  5. Put the lettuce in a large bowl. Add the nuts and the cubed beets. Pour the dressing. Toss gently.

  6. Garnish with the heart-shaped beets and grapefruit segments.
