Ingredients Serves 4
- 3.5 oz/100 g lettuce
- 2 beets
- 1 grapefruit
- 1 cup walnuts or pine nuts
- 1.5 tbsp apple cider vinegar
- 2 tbsp agave or maple syrup
- 1 tsp dijon mustard
- 1 clove garlic (optional)
- 1 tsp salt
Wash beets, place them into a pan, and fill with enough water to cover. Boil over medium low heat for about 40 minutes or until tender. Drain and let them cool. Next, peel and slice into 1/4 inch thick. I used cookie cutters to cut several heart-shaped pieces for garnish. Cut remaining beet into small cubes.
Wash, drain, and dry lettuce or whatever salad greens you like: arugula, baby spinach, corn, chard etc.
Cut the grapefruit segments out of the membrane. Chop the walnuts into smaller pieces. For this salad you can use walnuts, pine nuts or both. I used 50/50 mix.
In a small jar, combine 1.5 tablespoon of apple cider vinegar, 2 tablespoons of agave or maple syrup, 1 teaspoon of dijon mustard, 1 clove finely chopped garlic and 1 teaspoon of salt to make the dressing. Place a lid and shake until mixed well.
Put the lettuce in a large bowl. Add the nuts and the cubed beets. Pour the dressing. Toss gently.
Garnish with the heart-shaped beets and grapefruit segments.
