"It's absolutely marvelous and super easy! Everyone loves it! Yummy, yummy, yummy!!! Btw, you can use 1 tsp dried basil if you don't have fresh."

Ingredients Serves 4

  • 7 oz/200 g spaghetti
  • 4 small tomatoes
  • 1 cup cashew
  • 2 tbsp tomato paste
  • 2 tbsp oil
  • 6 cloves garlic
  • 1 bunch (2 oz/50 g) basil
  • 2 tsp salt
  • 1 tsp pepper

Method

  1. Cook spaghetti according to the package instructions.

  2. Roughly cut the tomatoes, chop the basil and garlic cloves.

  3. Place the tomatoes, tomato paste, cashew and 1 cup of hot water into blender. Blend until smooth.

  4. In a large frying pan heat oil over medium high heat, add garlic and fry for 2 minutes.

  5. Then add sauce and simmer for 5 minutes. Turn off the heat.

  6. Add basil, salt and pepper, mix thoroughly. Add sauce to cooked spaghetti and serve.

It's one of my favourites... I confirm that everyone loves it. And non-veggies are wondering why they used to eat spaghetti with meat... this healthy, quick, great recipe will extend the number of vegetarians, I'm sure !
