Ingredients Serves 4
- 7 oz/200 g spaghetti
- 4 small tomatoes
- 1 cup cashew
- 2 tbsp tomato paste
- 2 tbsp oil
- 6 cloves garlic
- 1 bunch (2 oz/50 g) basil
- 2 tsp salt
- 1 tsp pepper
Cook spaghetti according to the package instructions.
Roughly cut the tomatoes, chop the basil and garlic cloves.
Place the tomatoes, tomato paste, cashew and 1 cup of hot water into blender. Blend until smooth.
In a large frying pan heat oil over medium high heat, add garlic and fry for 2 minutes.
Then add sauce and simmer for 5 minutes. Turn off the heat.
Add basil, salt and pepper, mix thoroughly. Add sauce to cooked spaghetti and serve.
