Ingredients Serves 4

  • 1 14-oz can white beans
  • 9 sun dried tomatoes
  • Small bunch red basil
  • 1 clove garlic (optional)
  • 1/4 tsp salt

Method

  1. To make this pate you will need:
    - One 14-oz can white bean (drained and rinsed), or 2 cups of precooked white beans;
    - 8-10 sun dried tomatoes;
    - Small bunch of red basil, roughly chopped and hard stems removed;
    - 1-2 garlic cloves, peeled.

  2. If you have a powerful blender, just place all the ingredients into it and process until smooth. Otherwise, first place 8-10 sun dried tomatoes and process until finely chopped.

  3. Next, add the basil and process again.

  4. And finally, add the beans, garlic cloves and a pinch of salt. Blend until smooth and creamy.

  5. Optionally you can add 2 tablespoons of olive oil (from the sun-dried tomatoes jar) to reach more silky and soft consistensy.
