"This is a very simple and basic vegan vanilla-flavoured cake. I made it for celebrating Halloween but it's equally good for any occasion! Well, well, it's not very healthy, but it's so delicious, soft and moist! Yum!"

Ingredients Serves 6

  • 19 fl. oz/550 ml (almost 2 cups) soy or almond milk
  • 3 tsp apple cider vinegar
  • 1 cup sugar
  • 5.5 fl. oz/165 ml vegetable oil
  • 1 tbsp pure vanilla extract
  • 3 cups all-purpose flour
  • 4.5 tbsp cornstarch
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 1 tsp salt
  • 10.5 oz/300 g soft vegan butter (like Earth Balance)
  • 7 oz/200 g powdered sugar

Method

  1. For the cake:
    Combine soy (or almond milk) with 3 teaspoons of apple cider vinegar. Let it sit for at least 5 minutes. Next, add 1 cup of sugar, 5.5 fl. oz (165 ml) vegetable oil and 1 tablespoon of pure vanilla extract and whisk together.

  2. In a separate bowl sift together 3 cups of all-purpose flour, 4.5 tablespoons of cornstarch, 1 teaspoon of baking soda, 1.5 teaspoon of baking powder and 1 teaspoon of salt.

  3. Add the wet ingredients to a flour mixture and fold until just combined. Do not overmix.

  4. Using a measuring jar divide the batter into 3 equal parts. Heat the oven to 350 F (180 C), grease 7-oz round cake pan, pour the first part of batter into a pan and bake for 20-25 minutes until golden-brown. Check the donennes with a toothpick, it should come out clean. Let sit in the pan for 10 minutes before taking it out.
    Bake all the parts and let them cool completely.

  5. For the frosting:
    Beat the vegan butter until light and creamy. Gradually add the powdered sugar to the butter and beat to combine.

  6. Using a long serrated knife slice the tops off each cake layer to level them. Place the first layer on a piece of parchment paper. Spread about 4-5 tablespoons of frosting on top. Place the second layer on top of the first and do the same with the frosting. Place the third layer on top. As you can see I colored the frosting which I used for filling, but it's optional and up to you.

  7. Cover the cake with a thin layer of frosting (this will be your crumb coat). Place the cake in the fridge for half an hour to allow the crumb coat to set.

  8. Finally, spread a thicker layer of frosting on the top and sides of the cake. Refrigerate for another 30 minutes.
    Decorate your cake according to the occasion. I made 3 lovely ghosts out of cheesecloth since I made this cake for Halloween.
