Ingredients Serves 4

  • 1 cup oatmeal
  • 1.5 cup almonds
  • 1/2 cup dessicated coconut
  • 2 tbsp agave (or mapple) syrup
  • 1 tbsp oil
  • 1 lemon
  • 7 apples
  • 1.5 tsp cinnamon

Method

  1. Place the oats into the bowl of your blender or coffee-grinder and process until finely ground into a powder-like consistency

  2. Do the same with 1.5 cup of almonds.

  3. Using a microplane grater, zest one lemon.

  4. Prepare the crust:
    In a mixing bowl combine your oat flour, 1 cup of almond flour (we will need the rest later), 1/2 cup of dessicated coconut, 2 tablespoons of agave (or mapple syrup) and finely grated zest of one lemon. Stir well with your hands to ensure that everything is evenly distributed.

  5. Place the crust mixture in the pie pan (I used an 8-inch foil pie pan) and using your fingertips distribute it evenly on the bottom and sides.

  6. Bake at 370 F (190 C) degrees for 10-12 minutes. Take the pan out of the oven when the crust turn golden-brown. Let it cool.

  7. Prepare the filling:
    Peel and core 5 medium-sized apples, cut into pieces.

  8. Place the apples and 1.5 teaspoon of cinnamon into a blender and process until there is smooth consistency.

  9. Mix apple puree with 4-5 tablespoons of almond flour to thicken up the filling.

  10. Distribute the filling evenly over the layer of crust.

  11. Thinly slice the remaining 2 apples. Place the slices on the top of the filling making a pattern of concentric circles. Place the pie into the oven for 30-40 minutes.

  12. Let the pie cool for 15 minutes before taking it out of the pan. Make yourself a cup of tea and be ready to enjoy your wonderful creation!

You don't mention where to use the oil, may we presume it is to oil the dish ? Coconut oil would be the best in this case? Do you agree?
