Ingredients Serves 2 - 3
- 1/2 cup raw cashews or almonds
- 1 orange
- 1 cup dried apricots
- 1 cup desiccate coconut
Process one cup of raw nuts in a blender until finely ground. I used cashews but almonds are also good. Transfer the nut powder into a bowl.
Next, place the dried apricots into a blender jar and process until coarsely chopped.
Grate zest from one orange and squeeze 2 tablespoons of juice out of it.
Add 1 cup of desiccated coconut, zest of one orange and 2 tablespoons of orange juice into a blender and process together with apricots.
Transfer the mixture to the bowl, combine with ground nuts, stir well until all the nuts are incorporated and form a ball.
Shape mixture into small balls. Our truffles are ready, enjoy!
This recipe makes about 10-12 truffles. Store them in a fridge.
