Vegan Pilaf with Prunes step-by-step recipe |
"A delicious and easy rice pilaf with sauteed veggies and prunes. This dish is one of my family's favorite. It's very rich and flavorful, with an amazing hint of fruity sweetness."

Ingredients Serves 8

  • 2 onions
  • 3 carrots
  • 2 bell peppers
  • 3 tbsp oil
  • 1 cup pitted prunes
  • 3 cloves garlic
  • 3 tomatoes
  • 1 lb 2 oz/500 g rice
  • 1 bay leaf
  • 2 tsp salt
  • 1/2 tsp pepper


  1. Peel and rinse the vegetables. Cut 2 medium-sized onions into cubes, core and dice 2 bell peppers (see how to prepare a bell pepper), cut 3 carrots into matchsticks.

  2. Heat 3 tablespoons of oil in a large and deep skillet. Add the onions, carrots and bell peppers. Cook over low-heat for 15-20 minutes. Stir occasionally.

  3. Meanwhile, mince 3 cloves garlic, cut 1 cup of pitted prunes into strips, dice 3 tomatoes.

  4. Add the garlic, prunes, tomatoes into skillet. Add the rice, salt, pepper and one bay leaf. Stir well.

  5. Next, pour 4 cups of boiling water (800 ml), cover and cook over low heat for 15-18 minutes, or until the rice is done. All the water should be absorbed by the rice. Remove the bay leaf. Stir and let pilaf rest, covered, for 20 minutes.
