Ingredients Serves 2 - 3
- 1 cup jasmine or basmati rice
- 1 large carrot
- 1 large cucumber
- 4 circles (canned) pineapple
- 1/2 bunch green onion
- 7 oz/200 g green beans
- 2 tbsp oil
Cut the pineapple (fresh or canned) into small wedges. Read this article to know how to peel and cut the pineapples. Cut the carrot and cucumber into thin strips. Chop the green onion.
Cook the rice and set aside. If you are not sure how to cook perfect rice, click here.
Heat a skillet in a high heat, add 2 tbsp oil. Stir-fry the carrot and the green beans over high heat for 3 minutes. Stir occasionally.
Add the pineapple, cucumber and green onion. Season with salt. Cook 2 minutes, stiring frequently. Reduce heat to low.
Add the rice, stir well and remove from heat.
