Thai Cucumber Salad

Thai Cucumber Salad step-by-step recipe |

Ingredients Serves 2

  • 3 (10.5 oz/300 g) cucumbers
  • 1 red onion
  • 1/2 bunch cilantro
  • 2 tbsp salted peanuts
  • 1/2 lime
  • 1.5 tbsp soy sauce
  • 1 tbsp oil
  • 1/3 tsp chili powder


  1. Cut the cucumbers lengthwise and then into slices. Peel and dice the onion. Finely chop cilantro. Squeeze the juice out of lime, about one tablespoon

  2. Gently crush the peanuts. You can do it using your blender, but don't overdo it, as they quickly turn into powder. Alternatively, put the nuts into zip lock plastic bag and use a mallet to crush them into smaller pieces.

  3. In a salad bowl place the cucumber slices, onion, minced cilantro and crushed nuts. Add lime juice, oil and soy sauce. Season with chili pepper. Mix well and serve.
