Ingredients Serves 2
- 10 ripe strawberries
- 1 avocado
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp agave syrup or honey
- 1/2 tsp poppy seeds
- 2 pinches salt
- 2 cups baby spinach
- 2 tbsp sliced almond (optional)
Wash the strawberries, remove the green stems and cut them into slices.
Peel the avocado, discard the seed and cut the pulp into small pieces.
For the salad dressing combine olive oil, lemon juice and agave syrup (or honey) and mix well using a whisk or a spoon. Add the poppy seeds and salt, mix again.
Lay the baby spinach leaves on a plate, add the avocado and strawberries. Toss gently. Drizzle the lemon poppy seed dressing over the salad and garnish with the almond slices.
