Ingredients Serves 4

  • 3 potatoes
  • 2 carrots
  • 12 cherry tomatoes
  • 1 onion
  • 7 oz/200 g broccoli
  • 1/2 bunch fresh dill
  • 2 tbsp oil
  • 1.5 tsp salt
  • 1/2 tsp pepper

Method

  1. Peel and cut the potatoes into pieces. Peel the onion and slice it into half-moon shapes. Cut the cherry tomatoes in half. Peel and shred the carrot. Chop the dill finely.

  2. In skillet heat up the oil, add the onion and carrot and cook over medium heat for 10 minutes.

  3. Place the potatoes into a soup pan, pour over 5 cups of water. Bring to a boil and cook for 10 minutes over medium-low heat. Then add the broccoli florets (fresh or frozen), fried onion and carrot. After the water boils, cook for 5 minutes.

  4. Then add the cherry tomatoes, dill, salt and pepper. Stir and cook for further 2-3 minutes. Remove from heat, cover and set aside for 15 minutes.
