Ingredients Serves 6

  • 4 bell peppers
  • 1 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 2 cloves garlic
  • 1/2 tsp salt

Method

  1. Rinse the bell peppers, place them on a baking sheet and put into preheated to 400F/200C oven for 40 minutes. Turn the peppers over every 10 minutes to char them evenly on all sides. Take them out, you will see that the skin blistered and slightly blackened which is good.

  2. Put the peppers into a plastic bag, seal it and place into freezer for 30 minutes. The peppers will steam which will make the skins very easy to peel off.

  3. Slice the pepper vertically from top to bottom and remove residual seeds.

  4. Cut the pepper into long strips.

  6. To prepare a marinade, mix together olive oil, minced garlic, wine vinegar and 2 tbsp pepper juice.

  7. Place the pepper stips in a bowl, layer by layer, pour some marinade over each layer.

  8. Cover the bowl with a lid or a plastic wrap, place into fridge for at least 2-3 hours. Garnish with chopped parsley before serving.
