Ingredients Serves 4

  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 1 cup oatmeal
  • 1 tbsp baking powder
  • 1 tbsp flax flour
  • 1/4 tsp salt
  • 3 tbsp apple sauce
  • 3 tbsp oil
  • 1.25 cup soy milk
  • 1 cup blackcurrant

Method

  1. Prepare two bowls. In the first bowl whisk together the flour, oatmeal, baking powder, flax flour, salt and sugar.

  2. In the second bowl mix together the soy milk, apple sauce and oil.

  3. Pour the wet mixture into the bowl with the dry ingredients. Mix well to combine.

  4. Next, add the blackcurrant, either fresh or frozen. Carefully stir them in. If you are using frozen berries, do not defrost them before cooking.

  5. Preheat the oven to 350 F/180 C. Grease paper muffin cases with the oil. Line a standard 12 muffin tin with the greased paper cases.

  6. Using a spoon divide the batter evenly between the muffin cups.

  7. Bake for 25-35 minutes until golden-brown. Cool before serving.
