Ingredients Serves 3 - 4
- 3 sprigs
- 1/2 bunch parsley
- 1 chili pepper
- 1 cup bulgur
- 1.5 tbs tomato paste/pepper paste or both
- 1/2 lemon
- 3 tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp mint
Wash and chop the parsley and green onion. Remove seeds from the chili pepper, cut it finely.
Wash the bulgur, put into a large bowl, add 1 1/3 cup boiling water, cover the bowl with a lid, and set aside for 15-20 minutes.
In a small bowl combine tomato paste with 1/3 cup of hot water and mix until smooth.
Pour this mixture to the bowl with bulgur, mix well.
Next, add freshly squeezed juice of 1/2 lemon, extra virgin olive oil, parsley, green onion, chili pepper, salt and mint. Stir well.
