Exquisite Turkish Red Lentil Soup

Exquisite Turkish Red Lentil Soup step-by-step recipe |
"This rich and nutritious soup is absolutely to die for!! Oh boy, it is so savoury and absolutely delicious! This is my vegan adaptation of the most popular Turkish national soup called Mercimek. I am sure you will love it!"

Ingredients Serves 5

  • 2 cups red lentils
  • 3 tomatoes
  • 1 tbsp tomato paste
  • 1/2 lemon
  • 2 tbsp vegetable oil
  • 2/3 tsp chili powder
  • 1 tsp salt
  • 1 tsp dried mint


  1. Peel the tomatoes. In order to make it easier put them in a boiling water for 20 seconds and then rinse under cold water. Use the knife to make slight cuts and delete skin. Here is How I peel tomatoes.
    Cut the tomatoes into cubes.

  2. Heat up 2 tablespoons of vegetable oil in a soup pot over medium heat. Add cubed tomatoes and stir-fry for 3 minutes.

  3. Add 1 tablespoon of tomato paste, stir and cook for about 2 minutes together.

  4. Add washed red lentils and pour in 5 cups of water. Bring water to a boil, then turn the heat down, cover the pot and simmer for about 20-25 minutes.

  5. Check the lentils. If they are really soft and mushy, they are ready. Remove the pot from stove.

  6. Add spices: salt, black pepper, chili pepper, mint and juice of 1/2 lemon. Using an immersion blender process until smooth.

  7. Serve hot, garnish with lemon wedge and croutons. Enjoy your meal!

So delicious, thank you!! I will in Moscow in three weeks and was wodnering if there are any vegan places that you'd recommend? I read your post about it - also very helpful - but was wondering if there are any new places that opened up since then. Spasibo! :)
