Ingredients Serves 5
- 2 cups red lentils
- 3 tomatoes
- 1 tbsp tomato paste
- 1/2 lemon
- 2 tbsp vegetable oil
- 2/3 tsp chili powder
- 1 tsp salt
- 1 tsp dried mint
Peel the tomatoes. In order to make it easier put them in a boiling water for 20 seconds and then rinse under cold water. Use the knife to make slight cuts and delete skin. Here is How I peel tomatoes.
Cut the tomatoes into cubes.
Heat up 2 tablespoons of vegetable oil in a soup pot over medium heat. Add cubed tomatoes and stir-fry for 3 minutes.
Add 1 tablespoon of tomato paste, stir and cook for about 2 minutes together.
Add washed red lentils and pour in 5 cups of water. Bring water to a boil, then turn the heat down, cover the pot and simmer for about 20-25 minutes.
Check the lentils. If they are really soft and mushy, they are ready. Remove the pot from stove.
Add spices: salt, black pepper, chili pepper, mint and juice of 1/2 lemon. Using an immersion blender process until smooth.
Serve hot, garnish with lemon wedge and croutons. Enjoy your meal!
