Ingredients Serves 4

  • 1 cup couscous
  • 8 sun-dried tomatoes
  • 1/2 bunch basil
  • 4 tbsp pine nuts
  • 2 tbsp oil
  • 1/4 tsp salt
  • 1 tbsp balsamic vinegar

Method

  1. Wash and chop the basil finely. Cut the sun-dried tomatoes into small pieces. Prepare a cup of boiling water.

  2. In a bowl with a lid combine the chopped basil, tomatoes, couscous, (extra virgin) olive oil and salt. Stir well. Pour one cup of boiling water, cover the bowl and set aside for 5 minutes.

  3. Meanwhile, heat up a dry skillet over medium heat. Add the pine nuts and brown them for 2 minutes stiring ocasionally. As soon as some of them will get a brown color, remove from the stove.

  4. Add toasted pine nuts and a tablespoon of balsamic vinegar to couscous, mix well and serve!
