Ingredients Serves 4
- 1 cup couscous
- 8 sun-dried tomatoes
- 1/2 bunch basil
- 4 tbsp pine nuts
- 2 tbsp oil
- 1/4 tsp salt
- 1 tbsp balsamic vinegar
Wash and chop the basil finely. Cut the sun-dried tomatoes into small pieces. Prepare a cup of boiling water.
In a bowl with a lid combine the chopped basil, tomatoes, couscous, (extra virgin) olive oil and salt. Stir well. Pour one cup of boiling water, cover the bowl and set aside for 5 minutes.
Meanwhile, heat up a dry skillet over medium heat. Add the pine nuts and brown them for 2 minutes stiring ocasionally. As soon as some of them will get a brown color, remove from the stove.
Add toasted pine nuts and a tablespoon of balsamic vinegar to couscous, mix well and serve!
