Tuscan White Bean Soup

Ingredients Serves 4

  • 1 15-ounce can white beans
  • 1 onion
  • 1 stick celery
  • 2 cloves garlic
  • 1 tsp rosemary leaves
  • 2 tbsp oil
  • 3 tbsp tomato paste
  • 1.5 tsp salt
  • 1 cup shell-shaped pasta


  1. Peel the onion and garlic and cut them finely. Slice the celery stick.

  2. In a soup pan heat up 2 tbsp oil, add the onion and celery and cook over low heat for 10 minutes, stiring occasionally.

  3. Add the garlic and saute for 1 minute. Then add the rosemary leaves and tomato paste, stir well.

  4. Add the white beans without liquid, pour 6 cup water and bring to a boil. Boil covered for 5 minutes. Add salt, pasta and cook for 10 minutes until pasta is ready. Stir frequently. Serve hot.
