"Morning never tasted so delicious! This lovely bread is packed with raisins and walnuts! Really easy to make yet yummy and healthy!"

Ingredients Serves 4 - 6

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup agave nectar or maple syrup (or honey)
  • 1 cup soy milk
  • 1 banana
  • 1 cup raisin
  • 1/2 cup walnuts

Method

  1. Puree banana in a blender, or mash it with a fork. Ground the nuts using a blender, coffee grinder or mortar.

  2. In a large bowl mix the flour, baking powder and soda.

  3. Add agave nectar (or maple syrup), mix well.

  4. Add the milk and banana puree, stir well to combine.

  5. Then add the raisins and nuts, mix well.

  6. Pour the dough into a loaf pan, place it into preheated to 350F/180C degrees oven and bake for 45 minutes.

  7. Cool the bread for 20 minutes before serving.
