Ingredients Serves 6
- 1 cucumber
- 1/2 red onion
- 1 bell pepper
- 2 tomatoes
- 4 lettuce leaves
- 7 oz/200 g feta cheese
- 1/2 cup black olives
- 3 tbsp olive oil
- 2 tbsp lemon juice
- Salt, pepper to taste
Cut off the ends of the cucumber, cut into halves lengthwise, then slice each part from end to end.
Peel and cut 1/2 of red onion into semicircular rings.
Slice the bell pepper into strips. I used two halves of yellow and red peppers to make the salad even more colorful.
Cut the tomatoes into large dices.
Chop roughly the lettuce leaves.
In a large salad bowl combine cucumbers, tomatoes, bell pepper and lettuce leaves, salt and pepper to your taste. Keep in mind that we will add salty feta cheese. For the dressing blend olive oil and lemon juice untill thoroughly combined. Toss the vegetables with the dressing.
Cube the feta cheese.
Add black olives, toss gently. Heap the feta cheese on top of your salad and serve.
