Ingredients Serves 4
- 3 potatoes
- 1 carrot
- 2 salted cucumbers
- 3 sun dried tomatoes in oil
- 1 cup canned green peas
- 4 tbsp vegan mayo
Wash the potatoes and carrot, put them unpeeled into boiling water and cook for 20-30 minutes over medium-low heat. Check the potato for doneness by poking them with a fork. They should be soft. When done, drain and cool.
Peel the potatoes and the carrot.
Cut the potatoes, carrot, salted cucumbers and sun-dried tomatoes into small cubes.
Combine the diced vegetables in a salad bowl, add canned green peas.
Season with the vegan mayo and mix. The yummy vegan Olivier is ready to be served!
