Ingredients Serves 4

  • 3 potatoes
  • 2 carrots
  • 1 cup corn
  • 4 tomatoes
  • 2 tbsp oil
  • 1 onion
  • 2 cloves garlic
  • 1 inch/2.5 cm ginger root
  • 1 chili pepper
  • 1/2 tsp turmeric
  • 1 tsp caraway seeds
  • 1 tsp curry powder
  • 1.5 tsp salt
  • 1 tsp lemon juice

Method

  1. Peel the potatoes, cut them roughly into cubes. Peel and slice the carrots. Peel and chop up the onion. Cut the garlic finely. Remove seeds from the chili pepper, cut it finely. Peel the ginger root and chop it finely.

  2. Dice the tomatoes.

  3. Put the potatoes into a pan and cover with water. Bring to a boil over medium heat, cook for 7 minutes. Then add the carrot and corn, cover and cook for 8 minutes.

  4. In a frying pan heat up 2 tbsp oil over medium heat, brown the onion, garlic, gigner and chili pepper for 3-4 minutes, stiring often.

  5. Add the vegetables (without broth), tomatoes, lemon juice, salt and spices. Stew for 8 minutes. Serve hot.
