Oatmeal Cookies

Oatmeal Cookies step-by-step recipe |
"Soft, moist, chewy home-made oatmeal cookies are the best. These plant based cookies are very healthy and super easy to make, so you can enjoy them every day!"

Ingredients Serves 4

  • 1 banana
  • 1 cup soy/almond milk
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 tsp white wine vinegar
  • 1 cup oatmeal
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/3 cup desiccated coconut
  • 1/2 cup nuts (optional)
  • 1/3 cup raisin (optional)


  1. Puree banana in a blender. Mix banana puree, soy milk, sugar, vanilla extract and vinegar in a bowl.

  2. In a separate bowl combine oatmeal, flour, soda, baking powder, desiccated coconut. Optionally add raisin and ground nuts.

  3. Combine dry and wet mixtures, stir well until no flour is visible.

  4. Heat the oven to 350F/180C degrees. Using a small ice-cream scoop or a tablespoon, drop mounds of dough onto a baking sheet lined with parchment paper. Leave at least 1 inch space between cookies.

  5. Bake until nicely brown color for 20-25 minutes. You will get about 16 cookies.
