Ingredients Serves 5
- 1 corncob
- 5 cucumbers
- 1 onion
- 1 avocado
- 1/2 lime
- A bunch of dill, parsley, green onion
- 1/3 bell pepper
Start from the filling for your sailboats. Cut each cucumber into two parts lengthwise. Make sure that one part is slightly smaller than the other one. The bigger parts will form the sailboats and the smaller parts will be cutted for filling.
Cut corn off the cob. Peel the onion and cut it finely. Dice the smaller parts of the cucumbers. Chop up the dill, parsley and green onion. Peel and stone the avocado, roughly cut the flesh.
Combine corn, cucumber, onion, dill, parsley and green onion in a mixing bowl.
Prepare a dressing: blend avocado flesh with lime juice and 3 tbsp water until smooth. Mix the salad with the avocado sauce.
Start making the boats not long before serving. Otherwise, they won't look fresh. Using a sharp knife or a vegetable peeler cut a thin layer off the top of cucumber, retaining one end to be attached to the cucumber.
Using a teaspoon hollow out the seeds from each cucumber boat.
Fill the boats with the salad. Using a toothpick fix the sail as shown on photo. Place a bell pepper flag on top of a toothpick.
