Ingredients Serves 2
- 1 corncob
- 1 cucumber
- 1 onion
- 1 avocado
- 1/2 lime
- A bunch of dill, parsley and green onion
Cut corn off the cob. Peel the onion and cut it finely. Dice the cucumber. Chop up the dill, parsley and green onion. Peel and stone the avocado, roughly cut the flesh.
Combine corn, cucumber, onion, dill, parsley and green onion in a mixing bowl.
Prepare a dressing: blend avocado flesh with lime juice and 3 tbsp water until smooth.
Mix salad with the avocado sauce.
