"This dish is traditional for the Italian region of Liguria, a motherland of amazing pesto sauce! Somehow pasta and potato work great together, and pesto adds so special taste note! Hearty and delicious pasta!"

Ingredients Serves 4

  • 9 oz/250 g trofie pasta
  • 2 potatoes
  • 7 oz/200 g green beans
  • 5 tbsp pesto sauce
  • 30 g parmesan cheese
  • 1 tsp salt

Method

  1. Grate parmesan cheese. Peel the potato and cut into cubes. Rinse the green beans and cut into 2-3 parts. Use fresh or frozen green beans. You can either buy or prepare pesto sauce by yourself, use my recipe - http://www.vegelicacy.com/recipe/115

  2. Bring about 2.5 liters of water to a boil, add salt (2 pinches), reduce heat to medium, add pasta and potato. After 5 minutes of cooking add green beans and simmer for 8-10 minutes until pasta is done. Drain but save 1/3 cup of water.

  3. Add sauce pesto, salt, mix thoroughly. Serve with parmesan cheese.
