Tomato Soup

"This is a lovely light soup with a gorgeous tomato taste! Absolutely delicious, bright and healthy! Yum!"

Ingredients Serves 5 - 6

  • 1 lb 4 oz/1 kg ripe tomatoes
  • 1 onion
  • 1 carrot
  • 1 stick celery
  • 2 tbsp oil
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 2 tsp salt
  • 1 tsp pepper
  • 2 bay leaves

Method

  1. Cut the tomatoes into halves and discard hard cores, then cut each half into quarters. Peel the onion and carrot and dice. Slice the celery stick.

  2. Heat up 2 tbsp oil in a soup pan, saute the onion, carrot and selery overy low heat for 10 minutes. Stir occasionally.

  3. Add 2 tbsp tomato paste, stir well, then add the tomatoes, sugar, salt, pepper and bay leaves. Stir to combine and cook for 10 minutes.

  4. Add 5 cups of hot water, bring to a boil, cover with a lid and simmer for 20 minutes.

  5. Take out the bay leaves from the pan, puree the soup with a hand blender. Serve hot or cold with crispy breadsticks.
