Pumpkin Macaroni & Cheese step-by-step recipe |

Ingredients Serves 4

  • 9 oz/250 g macaroni
  • 9 oz/250 g pumpkin
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp oil
  • 3.5 oz/100 g cheddar cheese
  • 3.5 oz/100 g mozzarella cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 tsp nutmeg


  1. Peel the pumpkin, remove the seeds, cut the flesh into 1-inch cubes. Peel the onion and garlic cloves, cut them finely. Grate cheese.

  2. Cook the macaroni according to the package instructions.

  3. In a frying pan heat the oil, cook the onion, garlic and pumpkin over low heat for 8 minutes. Pour one cup of hot water, stew for 8-10 minutes until tender. Season with salt, pepper and nutmeg.

  4. Transfer into blender and process until smooth.

  5. Combine macaroni, pumpkin sauce and cheese, mix well, optionally add some finely chopped parseley.
