Ingredients Serves 4
- 9 oz/250 g macaroni
- 9 oz/250 g pumpkin
- 1 onion
- 2 cloves garlic
- 2 tbsp oil
- 3.5 oz/100 g cheddar cheese
- 3.5 oz/100 g mozzarella cheese
- 1 tsp salt
- 1/2 tsp pepper
- 1/3 tsp nutmeg
Peel the pumpkin, remove the seeds, cut the flesh into 1-inch cubes. Peel the onion and garlic cloves, cut them finely. Grate cheese.
Cook the macaroni according to the package instructions.
In a frying pan heat the oil, cook the onion, garlic and pumpkin over low heat for 8 minutes. Pour one cup of hot water, stew for 8-10 minutes until tender. Season with salt, pepper and nutmeg.
Transfer into blender and process until smooth.
Combine macaroni, pumpkin sauce and cheese, mix well, optionally add some finely chopped parseley.
