Today I want to share with you my recent culinary discovery. I love pasta and I love experimenting with pasta sauces and toppings. It's always fun for me, and sometimes this fun turns out to be delicious!  Last week I created something unusual. Not so long ago we spent a wonderful weekend in a small desolated village where Vasya's grandparents live during the summer season. It is situated in the forests of Tver region, just 3 hours away from Moscow. There are no creature comforts, no water supply system, no sewage, no mobile communication and no internet. When the spring rolls around, I feel so happy! Long and cold winter is behind, and now we are finally blessed to have these amazing warm and sunny days! Spring is my favourite time of the year! I love it because everything around is changing - the colors, smells, sounds and emothions! And these days I feel alive more than ever! Dear Spring where are you? I miss you so much! Today I woke up early in the morning feeling completely frozen. I looked out my window and saw white snowflakes outside. Right, it’s snow on May 7…  And why not, we are in Russia after all. I am not that kind of person, who complains about the weather, but I just feel that the spring isn’t coming to Moscow this year. The dish I am going to talk about today is truly to die for! I can literally eat it every single day for breakfast, lunch and dinner. Seriously! It’s called Ikra in Russian which actually means fish caviar but for some reason this word also means vegetable puree or pate. Ikra can be made of different vegetables (like eggplants, pumpkin, beets and mushrooms), but the most popular one is the squash caviar. You may be surprised to know that the traditional Russian cuisine provides a huge variety of vegan dishes. That’s because traditionally most of Russian people are Orthodox Christians, and for more than half of the year they are prescribed to observe various spiritual fasts. Moscow is a great tourist destination and worth visiting for sure. Just imagine you are in the heart of Russia, walking at the Red Square, exploring one of the most beautiful metro in the world, visiting amazing Tretyakov Art Gallery and watching incredible ballet at the Bolshoi Theater. Sounds exciting, isn’t it? As I wrote in my first post I live in Moscow, Russia. You may be surprised, but I am originally from Russia. Yes, really! I have been living here all my life and none of my family is an immigrant.
