Vegan Pasta with Beans, Sun Dried Tomatoes and Avocado

Today I want to share with you my recent culinary discovery. I love pasta and I love experimenting with pasta sauces and toppings. It's always fun for me, and sometimes this fun turns out to be delicious! 

Last week I created something unusual. At least for me, as I have never added beans to spaghetti before and I was not sure whether it's a good idea or not. But I was realy amazed with the result, the pasta is Yummaaaay! I absolutely loved how the ingredients work together. So good!

When I presented my creation to my hubby, he just couldn't stop eating it! He said it's perfect! Yahoo! That is what makes me happy! :))

In the last seven days I cooked this pasta three times! And I know I am going to make it again and again. It's really easy-to-cook and don't require much time. Perfect for the busy days! 

Vegan Easy Pasta with Sun Dried tomatoes, beans and avocado


Vegan Pasta with Beans, Sun Dried Tomatoes and Avocado

Serves 2 to 3

Ingredients

  • 1 medium onion
  • 2 cloves garlic
  • 12 sun-dried tomatoes
  • 2 tablespoons of oil
  • 1/3 teaspoon salt (or to taste)
  • 7 oz/200 g canned kidney beans
  • 9 oz/250 g spaghetti pasta
  • 1 ripe avocado

What to do

  1. Peel the onion, cut into half-moon slices. Peel and mince the garlic cloves. Julienne sun-dried tomatoes.
  2. Heat up two tablespoons of oil in a skillet. I use the oil from the sun-dried tomato package since it adds really nice flavor. Add sliced onion and julienned tomatoes, fry for 10 minutes over low heat till the onion is transculent. Next, add the garlic and salt.
  3. Three minutes later add the beans, stir well and remove the skillet from heat.
  4. Cook your spaghetti according to the package instructions. Drain.
  5. Combine spaghetti with the onion-bean-tomato topping.
  6. Right before serving, peel and cube the avocado. Add to pasta.

Recipe notes

  • For this recipe you will need a perfectly ripe avocado. Read this article to know how to choose a ripe avocado fruit. 
  • The avocado taste is not really good when it's heated. So, if you are planning to keep pasta for the next day, don't mix it with avocado. Add avocado right before serving.
