Vegetable Fantasy Recipe and photos of Russian nature

Not so long ago we spent a wonderful weekend in a small desolated village where Vasya's grandparents live during the summer season. It is situated in the forests of Tver region, just 3 hours away from Moscow. There are no creature comforts, no water supply system, no sewage, no mobile communication and no internet. But it's a heavenly beautiful place! 

We love to spend time in this green and quiet corner of Russia. It's so amazing to be close to nature and to rest from the hustle and bustle of a big city! The sun is caressing, the air is sufficiently warm and filled with the sweet odours of blossomed trees. It's a great time for swimming in the river and not get eaten by omnipresent mosquitoes.

Flowers are everywhere! The fruit trees are in full blossom and the ground is colored with the small wild flowers, dandelions and daisies.

I can't miss the opportunity to catch the beautiful moments of spring. I love making the photos of nature! And while I am walking around the garden with my camera, Vasya is busy in the garden. That's his obsession and he is very talented in planting. I admire how he handles the plants and how he feels their needs! I am absolutely incompetent in this, I used to grow flowers on the windowsill, but it was never successful.

It becomes quite hot under the sun. After great vegan lunch, cooked by Vasya's granny, we take the bikes and ride to the river. The landscape is so picturesque that cries out to be painted!

Seems like we lost track of time. We came back after the sunset. Being in the country is wonderful, but we have to come back to Moscow the next day.

On Monday I cooked a dish we have recently loved! It is made of new vegetables and perfect for spring or summer lunch. The taste is tender and delicious! And I love the colors!

Recipe is vegan and gluten free.

Vegan recipe of new vegetables

Vegetable Fantasy

Serves 3 to 4


  • 4-5 new potatoes
  • 2 carrots 
  • 1 onion
  • 1/2 red bell pepper
  • 2 sticks celery
  • 1 teaspoon salt 
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup green peas (fresh or frozen)
  • 2 tablespoons of sweet chili sauce (optional) 

What to do

  1. Rinse the potatoes and cut into pieces. Place them in a pot of water, bring to a boil and cook over medium heat for 10-15 minutes until the potatoes are fork-tender.
  2. - Peel and chop the onion
    - Peel and shred the carrots
    - Remove seeds from the bell pepper and cut into small cubes
    - Cut the celery finely.
  3. Heat 2 tbsp oil in a skillet, saute the onion and carrot over medium heat for 5 minutes. Stir from time to time.
  4. Add the bell pepper and celelry, cook for 5 minutes.
  5. Next, add the corn and green peas, fresh or frozen. There is no need to defrost the products before cooking.
    Add salt, reduce heat to low, and cook covered for 10 minutes. Stir occasionally.
  6. Remove from heat, add sweet chili sauce and mix well. Add the potatoes, stir carefully.
